Pumpkin Smoothie
Fall may be just around the corner, but it's not here quite yet and it's still definitely smoothie weather. What better way to celebrate both summer and fall than a pumpkin smoothie? Pumpkin is full of Vitamin A and rich in antioxidants. It also tastes delicious. And a healthy smoothie is much better for you than a a commercial pumpkin spice drink that contains plenty of chemicals, too much sugar, and no pumpkin whatsoever. You can play with the recipe like I do to cover any dietary concerns (no sugar, make it vegan, organic, etc.). I also use organic pumpkin, butternut squash or sweet potato that I've cooked at home for a different, delicious taste than the canned stuff (though canned is great when you're busy). Give it a try!
